My Favorite Lakeside Recipes

Around here, some of the best memories are made around the table, on the porch, and out on the lake with family and friends.

This is where I’ll share the recipes I actually make for the people I love—from quick dinners for busy work and school nights to game-day snacks, family favorites, sweet treats, and easy bites that are perfect for packing up and taking on the pontoon.

I’m not a professional chef—just a Mimi who loves to cook, feed her family, and find recipes that are delicious without making life more complicated.

So grab a recipe, make it your own, and enjoy it with the people you love.

Good food. Good company. Lake life. ❤️

Creamy Chicken Chili

1 1/2 to 2 lbs Chicken Breast/Thighs
1 medium Onions
2 cloves Garlic
1 tsp Cumin
1 tsp Chili Powder
Salt & Pepper
Large jar of Tomatillo Salsa
Northern Beans ( I also put in a can of black beans) all rinsed
1 can of corn (optional)
Chicken Broth
8 oz Heavy Cream
1 block Cream Cheese
Avocado and Monterey Jack Cheese on top

To make it: Sauté the onion in olive oil until softened, then add garlic for about 30 seconds. Add the chicken, beans, green chiles, tomatillo salsa, broth, cumin, chili powder, oregano and paprika. Simmer covered for about 20–25 minutes, until the chicken is cooked through.

Remove the chicken, shred it, and return it to the pot. Stir in the corn and cream cheese over low heat until completely melted. Add the heavy cream and shredded cheese. Simmer another 5–10 minutes without boiling. Finish with lime juice and adjust the salt and pepper.
